It has been a really long time since I followed through and posted a weekly menu. My diet and wallet were suffering because of this so it is time to start back up.
Monday: Breakfast – pancakes, eggs, bacon and hash browns.
Tuesday: Meatloaf with Cream of mushroom soup, mashed potatoes, green beans, corn. Request by Hubby.
Wednesday: Dinner out for family birthday. Will probably have Chinese or Sushi.
Thursday: Italian Roast Beef Sandwiches, Giant Eagle is having a sale on Good seasons dressing and Boneless Bottom Round Roast.
Friday: Chicken Tacos, black bean soup, spanish rice
Saturday: Tailgating at College Football Game.
Sunday: Roasted Chicken and vegetables.
Here is our menu for the week. We have been snowed in so I have lots of time to investigate the contents of my freezer. The grocery store was an absolute mad house. Glad I am pretty well stocked because I don’t see any big shopping trips in my future. Once the snow is gone I guess things will get back to normal
Monday: Chicken Fricassee with Chive Dumplings and green beans.
Tuesday: Stuffed Pigs from the freezer with mashed potatoes (I guess some would call them stuffed cabbage rolls, but we always called them Stuff Pigs.
Wednesday: I have class so it is mom’s choice what to cook (of course it could be cancelled due to the weather – crossing fingers). I think she is making tuna casserole for the fam. I can’t have this cheese laden casserole on my diet so that is fine that I am missing it.
Thursday: Meat and gravy with mashed potatoes. This is a old family favorite. It is basically round steak cooked for hours in broth, then adding mushroom soup for the last hour. I am sure there is a real name for it.
Here is our menu for the week. I had a bad weigh in at Weight Watchers so it is time for me to step up to the lower calorie plate. I will still allow more calories for shared family dinners and try to skimp on my lunch. I can’t push everyone too far…
Monday: Baked Rigatoni with salad and breadsticks. (Wheat pasta, part skim mozzarella and ricotta). No breadsticks for me with an extra helping of salad.
Tuesday: Beef Stroganoff with noodles and green beans. (Use lean beef round steak, fat free sour cream and lots of mushrooms).
Wednesday: I have class so it is mom’s choice what to cook. She will be glad not to have to watch the calories in the ingredients. I will probably have a sandwich on whole wheat bread and a light latte between classes.
Thursday: Chicken wing night at our favorite bar. I will be having a turkey wrap with side salad. I don’t think I will be able to squeeze in a beer… :(
Friday: Pork loin with baked apples, mashed potatoes with cauliflower and parsnips, peas.
Saturday: Cajun Shrimp with grits or polenta.
Here is our menu for this week. That makes two weeks straight for me. Most of the meals this week are coming from items I already have in the freezer. While I am not following the freezer challenge that some of you are I am making an effort to use what I have. A few of the items are great bargains that Giant Eagle is having this week.
Monday: Roasted Chicken, potatoes and carrots. (held over from last week):
Tuesday: Salmon Cakes with buttered whole wheat noodles and green beans. (using leftover salmon from Saturdays dinner).
Wednesday: Meatball sandwiches (frozen meatballs with Ragu and mozzarella cheese) with sweet potato fries and salad.
Thursday: Turkey and Black Bean Burgers with salsa (recipe from The Deen Brother’s New Cookbook, but here is almost an exact match online already.) I made a pot of Black Beans this weekend and have some ground turkey in the freezer. I also have the frozen corn and salsa in the pantry already. Will need to pick up an avocado to add to the salsa.
One of my Resolutions is to eat out less and PLAN my meals better. I do much better on Weight Watchers when I PLAN. I was able to lose 42lbs last year and would like to lose at least 35 more this year. PLANNING is the key for me…
Monday: Meat Loaf (with cream of mushroom soup), Mashed Potatoes, Green Beans
Tuesday: Beef Stew with Dumplings
Wednesday: Whole Wheat Spaghetti with Meatballs (frozen from Sam’s Club)
Thursday: Crockpot Chicken Tacos, Refried Beans, Spanish Rice (brown rice)
Friday: Baked Cod, Baked Potatoes, Spinach
Saturday: Homemade Individual Whole Wheat Pizza’s (veggie for me)
Sunday: Roasted Chicken, Stuffing, Mashed Potatoes, corn
For Lunch I will use the leftovers to make:
Chili with cornbread, Meatball sandwiches, chicken burritos.
Oh this week is going to be busy, so it best that start back to planning.
Monday: Ravioli with spaghetti sauce, salad and garlic bread.
Tuesday: Daughter is playing in State soccer playoffs so dinner will be out at a restaurant near the field (good wishes are welcome! – LOL)
Wednesday: Turkey Meat Loaf, mashed potatoes, corn.
Thursday: Turkey Tacos with the left over Turkey Meat Loaf. Black beans and spanish rice.
Friday: Baked fish, tater tots, green beans.
Saturday: Country Ribs baked in the oven, boiled baby potatoes with chives and butter, BBQ beans. We are going to a big college football game and needs lots of filling food to absorb the beer.
Sunday: Steaks on the grill, either baked potatoes or fettuccine with Alfredo sauce, home canned Harvard beets.
I am so proud, I finally have some control back in my home after the summer chaos of classes, moving my daughter from place to place for college/internship and my ongoing quest for fitness. Here is our menu for this week.
My theme ingredient for the week is going to be Jack Daniels. I will make Lynchburgh Lemonade for a cool refreshing drink for Saturday’s or Sunday’s Dinner, TGIF’s Jack Daniels Knockoff Dipping Sauce for Thursday and Pork and Honey Tenderloins which all will feature Jack Daniels. Cheers….
Monday – Boston Market Knockoff recipe for Meatloaf, mashed red skinned potatoes (cook extra potatoes for tomorrow), garden tomatoes and light creamed spinach.
Tuesday – Pork and Honey Tenderloin Kabobs, potato salad.
Wednesday – Grilled Cod Packets with fresh dill, Wheat Berry Salad with Tomatoes and Olives
Thursday – Grilled chicken tenderloins with Knockoff TGIF Jack Daniels Dipping Sauce, baked beans and salad with garden veggies.
Friday – Dinner out with DH. I will probably order a salad or other vegetarian based meal and a few micro brews….
Saturday – Grilled Flank Steak with Corn, Black Bean and Avocado Salad, salad with garden veggies
Ok I am a day late, but that is better than never. This is the last week of night class, yeah.. I am looking forward to a more normal schedule next week. So here is the plan for this week.
Monday – Chicken in the crockpot with Mango salsa.
Tuesday – Spaghetti and meatballs, garlic bread
Wednesday - Steak sandwiches with mushrooms, onions and sweet potato fries.
Thursday – Pork Loin with homemade applesauce and baked potatoes
Friday – Date night with Hubby (and celebration of end of night classes for a while)
Saturday – Salmon and Ahi Tuna on the grill. Hopefully I will be able to find some good corn on the cob to grill with it.
Sunday – Baked chicken with stuffing, mashed potatoes and gravy.
Only two more weeks of night class. I will be so glad to be done and get back to normal dinner weeks. Basically everyone will be gone for dinner this week so I am going to try to cook ahead and have some individual containers on hand for quick dinners.
Monday – SOS (creamed beef) with toast — I have class and hate this stuff. It is a favorite of hubbies.
Tuesday – Beef Pot Roast, gravy, mashed potatoes. Mom is cooking and this will probably be the only dinner we all have together.
Wednesday – Chicken Sausage and Rice Paella – I am in class, hubby can reheat it.
Thursday – Something with Chicken cooked in the crock pot. Haven’t figured this one out yet. I am leaning towards a white bean and chicken chili.
Friday – leftover pot roast sandwiches with home made, baked french fries and gravy.
Saturday – Grilled Tuna with roasted vegetables and salad greens from the garden.
Sunday – BBQ Chicken halves on the Grill, corn and baked beans.
This semester I am taking night classes and it is seriously screwing up my families dinner plans. Planning is going to be more important than ever.
Here is what we are having this week. Not the best menu but we are adapting.
Monday – Hamburgers on the grill. — I have class, hubby can handle burgers.
Tuesday – Enchilada casserole.
Wednesday – Baked cod fish with steamed broccoli and brown rice pilaf. – I am in class, my mom is making this.
Thursday – Grilled pork chops with mustard, scalloped potatoes
Friday – Something with Chicken cooked in the crock pot. Haven’t figured this one out yet. LOL.
Saturday – Dinner out.
Sunday – BBQ Ribs on the Grill
I have been too busy to plan out our meals and my budget and waistline are showing the negative results. Time to climb back on board.
Here is what we are having this week.
Monday – Meatloaf with mashed potatoes and corn.
Tuesday – Bean soup made from leftover ham.
Wednesday – Baked salmon with steamed broccoli and brown rice pilaf.
Thursday – Tacos made from the leftover meatloaf, refried beans and spanish quinoa
Friday – Stuffed round steak with mashed potatoes and green beans.
Saturday – Homemade pizza with turkey sausage and veggies.
Sunday – Pork roast with saurkraut and kielbassa.
This week is going to be a more expensive one and that sort of bothers me, but we have saved up some extra cash to offset our food budget. Tuesday is going to be a special treat for St. Patrick’s day. Hubbie loves that I am adding beer to the menu. Friday it is our tradition to eat at the local fish fry’s. I don’t like to eat out every Friday like this but these fish frys are very important fund raisers for our churches and fire halls so I do our part to support them. Sunday is my daughters 21st birthday so we are going up to her college and take her out to dinner. She has not told us yet where she wants to go, but I bet it will be a place that serves alcohol. Seems to be the week to drink…Cheers….
Monday: Spaghetti with Homemade Italian Turkey Sausage, salad and garlic bread.
Tuesday: Corned Beef and Cabbage, Harp Beer. Not sure if I will dye it green or not.
Wednesday: White Bean and Chicken Chili – recipe to follow, with homemade bread from the bread machine.
Some of the items are from last week that didn’t make it to the table as planned. My refrigerator is stocked with lots of fresh veggies and fruits as I found a new inexpensive organic market that had great prices and really fresh items. I am looking forward to eating well this week.
Monday – Chicken Fajitas with red and yellow peppers and onions, Spicy Spanish Quinoa (will try and post the recipe).
Tuesday – Homemade ricotta stuffed shells (fresh ricotta and fresh mozzarella) with salad and homemade bread (bread machine). Using fresh cheese is more expensive but my daughter is home on Spring Break and she deserves a treat.
Wednesday – Navy Bean Soup and salad. – always a budget friendly dinner and a favorite of my husband and daughters.
Thursday - Pork and sauerkraut with turkey kielbasa and fat free hot dogs. (brought over from last week).
Friday – Fish Fry Day. We will visit one of our local churches/fire halls. I always try and get baked fish and many more are serving this each year.
Saturday – Homemade pepperoni pizza, salad and baked chicken wings.
Another week of clearing out the freezer.
Monday: Baked Chicken, stuffing, mashed potatoes. – This has been on my list for the past two weeks. Finally cooked it.
Tuesday: Enchilada casserole. (Recipe to follow)
Wednesday: Cajun Salmon fillets, canned spinach, baked potatoes. (The fillets are from Sams Club)
Thursday: Black Bean Soup, homemade rolls, spinach salad. (using the ham hock in my freezer).
Friday: Dinner Out (From now till Easter we will visit various Fish Frys at local Churches and Fire Halls)
Saturday: Meat Loaf, mashed potatoes, green beans. (Ground beef and turkey from Freezer)
Sunday: Pork, sauerkraut, mashed potatoes, kielbasa. (Butterfly pork chops from freezer – They are from Sams Club but they were dry when I broiled them – maybe baking them with sauerkraut will tenderize them.)
Last week we stuck pretty close to the menu except for Sunday. I forgot to thaw out the chicken so I am moving it to next Sunday. I tried my hand again at homemade pizza and as usual it was a disaster. Anyone have an secrets to good homemade pizza? I can never seem to get it right. I used a thin crust recipe that we liked, but the pizza didn’t slip off the tray onto my stone correctly and what a mess. Also I must not have cleaned my stone well enough from the last time because it caused a greasy smoky mess while it was heating up. I had to take out all the smoke detector batteries……
So anyway, for this week will be enjoying the following:
Monday: Asian Stirfry with chicken, potstickers and refried rice (making extra rice for Thursday.
Tuesday: Spaghetti and Meatballs, (made the meatballs over the weekend).
Wednesday: Tacos made from leftover meatballs.
Thursday: Pepper Steak with steamed brown rice. (made this weekend) – will follow up with the recipe later this week.
Friday: Cajun Salmon steaks with baked potatoes with cheese and broccoli.
Below is what we are having this week for dinner. There should be plenty left over for lunches. I am still following Weight Watchers so some days I will get more to eat than others. Each dinner will be cost effective except for Saturday’s steaks.
Monday: Italian roast beef (made yesterday) on homemade rolls with horseradish sauce, tater tots, spinach salad.
Tuesday: Chicken and dumplings (made yesterday all I need to do is drop in the dumplings), green beans.
Wednesday: Foil baked cod with baked potatoes, salad (assuming I get my broken oven fixed by then), else it will be breakfast foods such as eggs and bacon with pancakes.
Thursday: Spaghetti with turkey meatballs, garlic bread (baked in bread machine), salad.
Friday: Date night out with hubby using a coupon from either the Entertainment book or Restaurant.com. I am going to shoot for either a lean fish or shrimp entree.
Saturday: Steaks (small one for me) with baked sweet potatoes and green beans.
Sunday: Roasted chicken with mashed potatoes and stuffing. There should enough leftover chicken to make chicken tacos for next week.
