Menu Monday – 01/18/2010


Here is our menu for this week. That makes two weeks straight for me. Most of the meals this week are coming from items I already have in the freezer. While I am not following the freezer challenge that some of you are I am making an effort to use what I have. A few of the items are great bargains that Giant Eagle is having this week.

Monday: Roasted Chicken, potatoes and carrots. (held over from last week):

Tuesday: Salmon Cakes with buttered whole wheat noodles and green beans. (using leftover salmon from Saturdays dinner).

Wednesday: Meatball sandwiches (frozen meatballs with Ragu and mozzarella cheese) with sweet potato fries and salad.

Thursday: Turkey and Black Bean Burgers with salsa (recipe from The Deen Brother’s New Cookbook, but here is almost an exact match online already.) I made a pot of Black Beans this weekend and have some ground turkey in the freezer. I also have the frozen corn and salsa in the pantry already. Will need to pick up an avocado to add to the salsa.

Friday: Beans and Weenies with homemade rolls (homemade baked beans cooked with fat free hot dogs – have the beans and hot dogs in the freezer already). I had seen a picture of beans and weenies in the Deen Bros cookbook and thought this childhood favorite might be just the thing for a flashback dinner.

Saturday: Grilled mixed steaks with baked potatoes and corn. I have a few different types of lone steaks that I will use up.

Sunday: Chicken Burritos with refried beans and spanish rice.

For Lunches I will use the leftovers to make:

Chicken Salad served with fresh spinach leaves and black beans and rice (Martha Stewart Magazine recipe). I also have a freezer full of Healthy Choice dinners, Boca Burgers that I will serve for lunch. Giant Eagle has cheap tuna packets for sale this week so I will throw in tuna salad in the lunch mix.

Funny!! We are having roasted chicken and fish cakes too for dinner. I see we think a lot. Great Menu!!
