Menu Monday – 2/8/2010
Here is our menu for the week. We have been snowed in so I have lots of time to investigate the contents of my freezer. The grocery store was an absolute mad house. Glad I am pretty well stocked because I don’t see any big shopping trips in my future. Once the snow is gone I guess things will get back to normal
Monday: Chicken Fricassee with Chive Dumplings and green beans.
Tuesday: Stuffed Pigs from the freezer with mashed potatoes (I guess some would call them stuffed cabbage rolls, but we always called them Stuff Pigs.
Wednesday: I have class so it is mom’s choice what to cook (of course it could be cancelled due to the weather – crossing fingers). I think she is making tuna casserole for the fam. I can’t have this cheese laden casserole on my diet so that is fine that I am missing it.
Thursday: Meat and gravy with mashed potatoes. This is a old family favorite. It is basically round steak cooked for hours in broth, then adding mushroom soup for the last hour. I am sure there is a real name for it.
Friday: We might go out if we have to stay in too long because of the snow, otherwise: Baked cod (Sam’s Club has the best cod tenderloins at a good price), baked potatoes, broccoli and cheese.
Saturday: Chicken wings with sweet potato fries. Bobby Flay had a good looking recipe in last weeks Parade magazine. Will try and post it later.
Sunday: I have no idea. Will have come up with something.
